Fried Turnip with Shredded Dried Cuttlefish [Ju Hu Char]

This is a popular Nyonya dish.
Ingredients
  • 1 turnip [thinly sliced and cut into long, fine strips]
  • 1 carrot [thinly sliced and cut into long, fins strips]
  • 10 pcs Dried mushrooms [thinly sliced]
  • Shredded dried cuttlefish strips
  • 200g Pork belly
  • 2 cloves garlic [finely chopped]
  • Celery leaves [finely chopped for garnishing]
  • 2-3 tbsp cooking oil
  • Pinch of salt
  • 1.5 tsp sugar
  • Dash of white pepper
  • Dash of chicken stock

Method
  1. Heat cooking oil in wok.
  2. Brown garlic in heated oil.
  3. Add pork belly, mushrooms and cuttlefish strips and stir-fry for 1-2 mins.
  4. Add turnip and carrot strips and fry over low heat till soft.
  5. Add seasoning - salt, sugar, white pepper & chicken stock.
  6. Continue fyring until cooked, sprinkling a few drops of water occasionally to keep wok moist. Remember not to add too much water while frying to prevent dish from being too watery.
  7. Sprinkle finely chopped celery on dish, just before serving.

The secret to cooking this dish well lies in the frying process.
