Som Tam Tai [Green Papaya Salad]

This Thai recipe is compliments from the renowned Executive Chef of Jim Thompson in Bangkok.

Ingredients
  • 38g Palm sugar
  • 36g Lime juice
  • 42g Fish sauce
  • 135g Green papaya
  • 75g Cherry tomatoes
  • 15g Dried shrimps (roasted)
  • 30g Peanuts (roasted)
  • 36g String beans
  • 6g Bird's-eye chillies
  • 10g Garlic
Method
  1. Mix chilli and garlic in mortar and pound slightly.
  2. Add cherry tomatoes, string beans and season with palm sugar, fish sauce and lime juice.
  3. Keep pounding and add green papaya
  4. Toss until well mixed.
  5. Add dried shrimps and peanuts and keep tossing and pounding until well mixed.
  6. Serve right away.

Best served with Thai sticky rice , cabbage, morning glory or string beans.
Portion : 2-3 persons
