Ingredients
- 15 large prawns
- Half-cup oats
- A handful of curry leaves
- 4 cloves garlic (minced)
- 2 red chillies (chopped)
- 2 tbsp lemon juice (optional)
- 1 tbsp sugar
- 1 tbsp oyster sauce
- 2 tbsp oil
- Salt
- Pepper
Method
- Sprinkle salt and a little sugar on prawns and leave to season. Set aside for 20 minutes.
- Heat oil in wok and brown half the minced garlic.
- Add prawns and fry till prawns turn reddish in colour.
- Add lemon juice and continue frying.
- Add pepper, oyster sauce and sugar to taste.
- Remove prawns from wok and set aside.
- In a clean wok, heat oil and brown remaining minced garlic.
- Add chopped chillies and curry leaves. Fry till fragrant.
- Return the prawns to wok.
- Add oats and continue frying till oats start to brown.
- Remove from wok and serve.
