Scones

Ingredients

2 cups of (single or pouring) cream
3 cups of plain flour
3tsp baking powder
2tbsp caster sugar

Method

1. Preheat oven to 180C.
2. Whisk 2 cups of (single or pouring) cream until soft peaks form.
3. Sift over a cup of plain flour at a time, fold the mixture in.
4. Flour in the baking powder.
5. Sift in the caster sugar.
6. Turn into a lightly floured surface and press out the dough until 3cm thick.
7. Cut with a round shaped cookie cutter and place scones onto the baking paper. Alternatively you can use a muffin tray.
8. Bake for 12-15 min until scones are puffed and golden.
9. Serve with jelly jam and cream. Serves 12.

Alternatively for different flavoured scones, you can mix in fruit, nuts or raisins. Enjoy!
